Last night & tonight's dinners

Monday - cheesey pasta bake thing

1 can progresso three cheese meal starter
1 can chicken (big one from SAMs 14oz I think?)
1/4-1/2c bacon crumbles
2 eggs
2c shredded cheese (I used Colby jack)
1 box of small noodles (16oz rotini)
1 can sliced mushrooms
1 jar artichoke hearts
1/2t crushed garlic
Drizzle of oil (evoo or truffle oil yum)
Seasonings to taste (salt, burger mix)

Cook mushrooms & artichokes in oil. Combine everything else but eggs into veg for sauce. Leave a little bacon & cheese for the top of the bake. Cook & drain noodles. Mix noodles & sauce with eggs. Pour it all into the baking dish (I used a square glass one) and add bacon & cheese to top. Bake at 400 for 15-20m then eat the crap out of it!

Tuesday - Shrimpy Alfredo

1/2-1lb small pre-cooked shrimp (I used two things of salad size)
1 box long noodles (angel hair)
1 jar Alfredo sauce (ragu sux, Classico FTW)
1/2t lemon zest (about 2 sq in off the lemon)
10 finely grated baby carrots (one big one maybe)
Drizzle of oil (evoo or truffle)
Seasoning to taste (salt, lemon pepper)

Cook zest & carrots in oil. Add sauce & stir. Add shrimps to sauce. (Mine were frozen, so I put them in my Pampered Chef micro cooker with some water for a bit.) Cook & drain noodles. Add sauce to noodles. Eat.
